Wholemeal Bran Tea Cake

Cake made with wholemeal flour and bran

Ingredients

1 cup baking bran

1/2 cup sugar

1 teaspoon Edmonds baking powder

1/2 teaspoon salt

1 cup wholemeal flour

1 1/4 cups milk

1 tablespoon golden syrup

3/4 cup chopped dried apricots

1 teaspoon Edmonds baking soda

1/4 cup lemon juice

Method

Put bran, sugar, baking powder, salt and flour in a large bowl

Stir well to combine

In a saucepan place milk, golden syrup and apricots

Gently heat until syrup dissolves

Remove from heat

Add baking soda and lemon juice

Pour heated ingredients into the bowl

Mix quickly to combine.

Do not over mix

Pour mixture into a greased and lined 22 cm loaf tin

Bake at 190°C for 40 minutes or until an inserted skewer comes out clean when tested

Leave in tin for 10 minutes before turning out onto a cooling rack
