Whitebait Fritters
A delicacy
Ingredients
125 g whitebait or strips of firm white fish - e.g. lemon fish, trevelly, orange roughy
oil for shallow frying
lemon wedges
1 egg
1 cup Edmonds plain baking flour
1/2 teaspoon salt
1/2 teaspoon Edmonds baking powder
1/2 cup milk approximately
Preparation
Sift flour, baking powder and salt into bowl
Add egg and sufficient milk to mix to a smooth batter
Drain whitebait well
Stir in whitebait or fish
Coat well with egg mixture
Heat oil in large frying pan.
Add fritters and cook until golden on both sides
Drain on absorbent paper.
Serve with lemon.
