Vegetable Pie

A mixture of vegetables baked into a pie

Ingredients

Pastry

1 & 1/2 Cups wholemeal flour

1/2 teaspoon salt

1 teaspoon Edmonds baking powder

100 g butter

1/4 cup water, approximately

Filling

2 medium potatoes, grated

2 courgettes, grated

1 large onion, grated

1 cup grated pumpkin

1 clove garlic, crushed

1/2 cup grated tasty cheese

1/4 cup chopped parsley

2 tablespoons chopped chives

1/4 cup relish

salt

black pepper

4 egg whites

Preparation

Sift flour, salt and baking powder into a bowl

Rub butter into dry ingredients until mixture resembles fine breadcrumbs

Add enough water to mix to a smooth, firm dough

Knead lightly

Cover and chill for 15 minutes

On a lightly floured board, roll out dough and line a 22cm pie plate

Spoon prepared filling into pastry base

Bake at 190°C for 40 minutes or until golden

Filling

Combine vegetables, garlic, cheese, parsley, chives and relish, mixing well

Season with salt and pepper to taste

In another small bowl, beat egg whites until stiff but not dry

Carefully fold egg whites into vegetable mixture

Serves 6 - 8
