Vegetable Fritters

Vegetables fried in a batter

Ingredients

1/2 cup Edmonds plain baking flour

1/2 teaspoon salt

1/2 teaspoon curry powder

1/2 teaspoon Edmonds baking powder

1/4 cup grated onion

1/2 cup milk

1 cup grated vegetables - e.g. beetroot, courgette, pumpkin carrot, kumara

1 egg white

2 tablespoons oil

Method

Sift flour, salt, curry powder and baking powder into a bowl

Stir in onion

Gradually add milk, mixing until smooth

Batter should be the consistency of thick cream

Stir in vegetables of your choice

In another small bowl, beat egg white until stiff but not dry

Carefully fold egg white into vegetable mixture

Heat oil in a frying pan

Drop tablespoonsful of vegetable mixture into pan

Cook until golden then turn and cook other side

Drain on absorbent paper

Serve hot
