Veal Cordon Bleu

An International dish from Switzerland, wiener schnitzel

Ingredients

8 small pieces wiener schnitzel

2 large slices ham

4 slices cheese

1/4 cup Edmonds plain baking flour, approximately

salt pepper

2 eggs

1/4 cup water

1 1/2 cups toasted breadcrumbs

50 g butter

2 tablespoons oil

Method

Put a piece of plastic wrap over one schnitzel at a time

Using a rolling pin, roll the meat thinner

Repeat with remaining meat

Cut ham in half

On half the pieces of meat, place a piece of ham

Top with a slice of cheese

Place another piece of meat on top, pressing edges together

Combine flour, salt and pepper to taste

Coat schnitzels in seasoned flour

Beat eggs and water together

Dip schnitzels in this

Coat in breadcrumbs

Repeat with egg and breadcrumbs

Heat butter and oil together in a large frying pan

Add schnitzel and cook for 5 minutes each side or until golden

Chicken Cordon Bleu

Use single boneless chicken breasts instead of schnitzel. Roll thinly then proceed as for schnitzel
