Tomato Chutney
Start with tomatoes, onions, apples, raisins and sugar, the base for a tomato chutney
Ingredients
2.25 kg green or firm tomatoes, chopped
6 onions, chopped
1.25 kg apples, peeled and chopped
2 cups seedless raisins
1 cup crystallized peel
4 cups brown sugar
4 cups DYC malt vinegar
2 tablespoons salt
1 teaspoon black peppercorns
2 teaspoons whole cloves
2 chillies
Method
Put tomatoes, onions, apples, raisins, peel, sugar, vinegar and salt into a preserving pan
Tie peppercorns, cloves and chillies in muslin and add
Bring to the boil, stirring
Boil steadily with frequent stirring for about 2 hours or until mixture is thick and jam-like
Remove spice bag
Pack into sterilised jars
Makes about 6 x 350ml jars
