Toffee Apples and Nut Toffee
A kids delight toffee apples and toffee, three recipes
Ingredients
Toffee Apples
Few drops red food colouring
8 apples, approximately
8 wooden ice-block sticks or wooden skewers
3 cups sugar
1 tablespoon DYC white vinegar
1 tablespoon butter
1/2 cup water
1/2 teaspoon cream of tartar
Method
Put sugar, vinegar, butter and water into a saucepan
Heat gently, stirring constantly until sugar dissolves
Add cream of tartar and food colouring
Bring to the boil
Do not stir
Let mixture boil until the hard crack stage
While mixture is boiling, wipe the apples
Push an ice-block stick into each stem end
Remove pan from heat, tilt slightly then dip an apple into the toffee, turning to coat
Place on a sheet of baking paper or non-stick foil
Repeat with remaining apples
Leave until cold and set

Nut Toffee
2 cups sugar
1/2 cup cream
2 tablespoons butter
1/2 cup chopped nuts
Method
Put sugar, cream and butter into a saucepan
Heat gently, stirring constantly until sugar dissolves
Bring to the boil
Do not stir
Let mixture boil until the soft crack stage
Add nuts
Stir gently
Pour into a buttered tin
Mark into squares
Cut when cold
