Sultana or Raisin Loaf

Make loaf with either sultanas or raisins, for variety add choppded nuts

Ingredients

1 cup sultanas or raisins

1 tablespoon butter

1/2 cup sugar

1 tablespoon golden syrup

1/4 teaspoon salt

1 teaspoon Edmonds baking soda

1 cup boiling water

2 cups Edmonds plain baking flour

1 & 1/2 teaspoons Edmonds baking powder

Method

Put sultanas, butter, sugar, syrup and salt in a bowl

Sprinkle baking soda over

Add water

When butter has melted sift in flour and baking powder

Mix quickly

Bake in a greased 22 cm loaf tin at 180°C for 40 minutes, or until loaf springs back when lightly touched

Leave in tin for 10 minutes before turning out onto a cooling rack

Sultana Nut Loaf

Add 1/2 cup chopped walnuts to sifted ingredients
