Spicy Potatoes
Potatoes oven baked with cayenne pepper, chilli powder, paprika, cumin, black pepper and oregano, real spicy
Ingredients
4 medium Desiree, Russet or Pontiac potatoes, cut into 2.5 cm cubes
1 teaspoon cayenne pepper
1/2 teaspoon chilli powder
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried oregano
1/4 teaspoon salt
2 teaspoons canola oil
Olive oil cooking spray
Method

Preheat oven to 220 C
Line a baking sheet with aluminium foil
Spray the foil with olive oil cooking spray to prevent sticking
Place the baking sheet in the oven while the oven is heating and potatoes are being prepared

In a large bowl, combine cayenne pepper, chilli powder, paprika, cumin, black pepper, oregano and salt
Stir in oil
Mix well

Add potatoes to spice mixture and toss to coat
Place potatoes in a single layer on a prepared baking tray
Bake, turning occasionally, until potatoes are tender and golden, for about 20 to 25 minutes
Serve immediately while still hot
Variation
To make spicy potato chips, preheat oven to 220 C. Spray a baking sheet with vegetable cooking spray. Slice potatoes very thinly, coat with spice mixture. Arrange the potato slices in a single layer on prepared baking tray and bake until tender and crisp. about 55 minutes
