Spicy Pork & Pineapple
Very easy pan fried pork with spices and pineapple
Ingredients
500 g pork rump steak
1 & 1/2 teaspoons oil
1 clove garlic, crushed
1 large onion, chopped
1 green pepper sliced
1 red pepper, sliced (optional)
1 teaspoon turmeric
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
200 ml tomato puree
1/2 cup pineapple in juice, drained and diced
Method
Cut the pork rump steak into 4 evenly sized portions
Heat the oil in a heavy based frying pan, add the garlic, onion, peppers, turmeric, cumin and ginger and cook over moderate heat for 5 minutes
Stir occasionally
Add the pork, tomato puree and pineapple
Cook, stirring occasionally, until the pork is tender (about 40 to 45 minutes)
