Scones
The scone recipe plus variations, date, cheese and sultana scones
Ingredients
3 cups Edmonds plain baking flour
6 teaspoons Edmonds baking powder
1/4 teaspoon salt
50 g butter
1 and 1/4 cups milk
milk
Method
Sift flour, baking powder and salt into a bowl
Cut butter in until it resembles fine breadcrumbs
Add milk and mix quickly to a soft dough with a knife
Lightly knead
Lightly dust an oven tray with flour
Press scone dough out onto this
Cut into 12 even-sized pieces
Leave a 2 cm space between scones
Brush tops with milk
Bake at 220°C for 10 minutes or until golden brown
Makes 12
Cheese Scones
Add 1/2 cup grated cheese and a pinch of cayenne pepper to flour. Before baking top each scone with a small amount of grated cheese
Date Scones
Add 3/4 cup chopped dates, 1 tablespoon sugar and 1/2 teaspoon cinnamon to flour. Before baking sprinkle scones with mixture of cinnamon and sugar
Sultana Scones
Add 1/2 cup sultanas to flour
