Savoury Pancakes with Bacon

Pancakes for Breakfast serves with bacon or sausages. Batter recipe

Ingredients

1 cup flour

1 egg

1/2 cup milk

1/2 teaspoon salt

3 cold boiled potatoes

1 spring onion, finely sliced

1 fresh chilli, finely sliced

Butter to grease frying pan

Bacon & breakfast sausages to serve

Preparation

In a large bowl mix together the flour, egg, milk and salt to make a batter and set aside

Grate the cold boiled potato and add to the batter, stir to combine

Add the spring onion and chilli and stir to combine

Heat a frying pan (non-stick) and grease lightly with butter

Spoon three or four big spoonfuls of the mixture into the pan and cook over a low to medium heat

When bubbles appear on the top of the pancake turn over

Cook until nicely browned on both sides

Keep warm in oven while you cook the rest

Serve with fried bacon or breakfast sausages
