Savoury Brown Rice Casserole
Ingredients
1 cup brown rice
3 rashers bacon, chopped
1 green pepper, chopped
1 red pepper, chopped
4 tomatoes, blanched and chopped
2 cups chicken stock
1 large onion, chopped
2 cloves garlic, crushed
1 teaspoon salt
pepper
25 g butter
Method
Put rice, bacon, half the green and red peppers, tomatoes, stock, onion, garlic, salt and pepper into an ovenproof casserole dish
Cover with a tight-fitting lid or foil
Cook at 180°C for 1 1/2 hours or until rice is tender
Stir halfway through cooking
Just before serving, stir in butter and remaining red and green peppers
Serves 4 - 6
