Salmon Rissoles
Flaked salmon, potatoes and onion combined, shaped into rounds and pan fried until golden
Ingredients
210 g can salmon
1 cup mashed potato
2 tablespoons finely chopped onion
1/2 cup Edmonds plain baking flour
2 teaspoons Edmonds baking powder
salt, black pepper
1/4 cup chopped parsley
oil for shallow frying
Preparation
Drain and flake salmon, reserving liquid
Combine salmon, reserved liquid, potato and onion
Sieve flour and baking powder together into salmon mixture
Season with salt and pepper to taste
Add parsley
Mix well to combine
Divide mixture into eight even-sized portions
Shape into rounds
Heat oil in a large frying pan
Add rissoles and cook until golden on both sides
Drain on absorbent paper
Serves 4
