Roasted Salmon
Roasted Salmon served with Steamed Broccoli and Hoisin Sauce
Ingredients
1/3 cup hoisin sauce
1 teaspoon sesame seeds
Juice and zest of 1 lime
4 fresh salmon fillets, 170g each, skin removed
300g baby broccoli
1 tablespoon olive oil
1 lemon, cut into wedges
1 spring onion, thinly sliced on an angle
Olive oil, for brushing
Method
Preheat the oven to 200°C fan forced and bring a medium pan of salted water to the boil
Mix the hoisin sauce, sesame seeds, lime juice and zest in a small mixing bowl
Line a baking tray with aluminium foil and brush with oil.
Season the salmon fillets lightly with salt and pepper on both sides and place onto the tray.
Spoon the glaze over each piece of salmon and place the tray into the oven to cook for 6-8 minutes or until the salmon is just pink in the centre.
Remove from the oven and rest for 3 minutes, lightly covered with foil.
While the salmon is resting, cook the baby broccoli in the boiling water for 2-3 minutes or until bright green and tender.
Drain the baby broccoli and toss lightly with some olive oil and season to taste with salt and pepper.
Divide the baby broccoli among serving plates and place a salmon fillet onto each plate.
Add the lemon wedges.
Garnish with spring onions and serve immediately.
