Roasted Honey Almonds, Sweet Chilli Peanuts and Curried Nuts. Make your own party crowd pleasers. Nuts with a gourmet twist

Honeyed Almonds

Preparation

Combine 1/4 cup honey, 2 tablespoons caster sugar, 10g butter and 1/2 teaspoon ground cinnamon in a saucepan

Cook, stirring, until the butter melts

Add 200g blanched almonds

Stir to coat. Roast until golden

Roasting method for all three nut combos

Preheat oven to 180°C

Line a baking tray with non-stick baking paper

Coat the nuts in your chosen mixture, then transfer to the prepared tray

Roast nuts, stirring every 3 minutes, for 12-15 minutes, or until golden

Once roasted, set aside to cool

Can be stored in an airtight container for up to 1 week

 


Sweet Chilli Peanuts

Preparation

Combine 200 g peanuts and 1/3 cup sweet chilli sauce in a bowl

Stir until well coated. Roast until golden.

 


Curried Nuts

Preparation

Whisk 1 egg white in a bowl until frothy

Whisk in 3 teaspoons curry powder, 1 teaspoon salt and 1 teaspoon caster sugar

Stir in 2 cups mixed nuts such as cashews and walnuts

Roast until golden
