Roast Pork Loin with Cranberry Glaze or Garlic and Rosemary

Two recipes to flavour a pork loin, a Cranberry Glaze or Rosemary and Garlic

Ingredients

Roast Pork with Cranberry Sauce

1 kg pork loin

2 tablespoons cranberry sauce

2 tablespoons grainy mustard

1 tablespoon port

salt and freshly ground black pepper to taste

Method

Preheat the oven to 160 C

Place the pork in a baking dish and cook for 30 minutes

Mix the cranberry sauce, mustard, port salt and pepper together and spread over the pork

Cook for a further 20 to 30 minutes, basting occasionally or until the juices run clear


Ingredients

Garlic & Rosemary Roast Pork Loin

1 kg pork loin

2 cloves garlic, peeled and cut into quarters

3 sprigs fresh rosemary

Method

Preheat oven to 170 C

Use a sharp knife to make eight small cuts over the pork

Place the garlic quarters in the cuts

Place the rosemary on top of the roast

Cook in a preheated oven for 1 to 1 1/4 hours

If using the pan dripping to make gravy, discard the rosemary

Serves 6 - 8
