Roast Fillet with Grilled Peppers

Oven roasted pork fillets with grilled peppers

Ingredients

2 pork fillets

2 red, 2 yellow, 2 orange peppers deseeded, cut into 6 - 8 wedges

Dressing

2 tablespoons balsamic vinegar

1/4 cup oil oil

salt and freshly ground black pepper to taste

Method

Preheat oven to 170 C

Place the fillets in roasting dish and cook for 25 to 30 minutes

Remove from oven

Rest for 10 to 15 minutes then cut on the diagonal

Preheat the grill

Place peppers under grill until skin blackens and blisters

Remove from the grill and peel off the skin

Toss in the dressing

Serve the pork on top of the peppers

Serves 4 - 6
