Warm Potato Spinach Bacon Salad
Warm summer salad no peel potatoes and bacon
Ingredients
500g whole Perlas potatoes
1 Tablespoon olive oil
240g pack lean bacon, chopped
2 Tablespoon white wine vinegar
2 Teaspoon clear honey
225g baby spinach leaves
Salt and freshly ground black pepper
Method
Place the potatoes in a saucepan of lightly salted boiling water
Cover and simmer for 10 minutes or until tender
Drain and allow to cool slightly
Meanwhile, heat the oil in a large frying pan and fry the bacon until crispy
Add the potatoes and fry for 1·2 minutes
Add the vinegar, honey and seasoning and cook for a further minute
Allow to cool slightly before tossing onto the spinach leaves
Serve immediately

Try them roasted in the oven or on the BBQ
Add a few extra to the pot. Great with breakfast or as a satisfying snack for all the family the next day. Great popped into school lunches
