Pork Stir Fry
Pork strips stir fried with broccoli, cauliflower, peppers, spring onions, pineapple and cashew nuts
Ingredients
300g pork fillet
1 tablespoon oil
2 tablespoons cashews nuts, raw and unroasted
125 g broccoli florets
125 g cauliflower florets
1 red pepper, deseeded and cut into strips
1 yellow pepper, deseeded and cut into strips
1 spring onion, finely chopped
1 cup pineapple pieces
1/2 cup chicken stock
1/2 cup water
1 tablespoon soy sauce
1 tablespoon cornflour
1 tablespoon honey
Method
Slice pork thinly across the grain.
Set aside
Heat the oil in a wok or frying pan.
Add the cashew nuts and stir fry until golden brown.
Remove from the pan and set aside
Add the broccoli and cauliflower to the pan.
Stir fry for 30 seconds
Add the pork and stir fry for 3 minutes
Add the peppers, spring onions and pineapple.
Stir fry for a further 2 minutes
Sauce
Combine the last five ingredients and stir into the mixture.
Bring to the boil, stirring, then cook for 1 to 2 minutes or until the sauce thickens.
Add the cashew nuts
Serves 4
