Pork With Satay Sauce

Diced pork pan fried in a soy sauce, ginger and orange juice satay marinade

Ingredients

500g diced pork

1/2 tablespoon soy sauce

1 teaspoon chopped root ginger

1/4 cup orange juice

Sauce

1 tablespoon oil

1 onion chopped

1 - 2 cloves garlic, crushed

1/4 teaspoon chilli powder

1/4 teaspoon ground ginger

1 tablespoon brown sugar

1/4 cup crunchy peanut butter

1/2 cup coconut cream

1 tablespoon lemon juice

Method

Place the pork in a bowl.

Combine soy sauce, ginger and orange juice and add to the pork.

Toss.

Cover and leave for 1 to 2 hours or refrigerate for 2 to 24 hours.

Stir occasionally

Remove pork from the marinade

Heat a heavy-based pan, add a little oil and cook the pork, stirring occasionally for 10 to 15 minutes

Transfer to a serving dish

Sauce

Heat the oil in a pan, add the onion and cook until soft

Add the remaining ingredients.

Simmer for 5 minutes, stirring occasionally, add a little water if necessary.

Pour the sauce over the pork and serve
