Pork and Potato Casserole

Pork and Potato oven baked casserole flavored with cider

Ingredients

700 g potatoes, peeled and sliced thinly

1 onion, peeled and sliced thinly

2 cloves garlic, crushed

1 tablespoon oil

4 pork loin chops

1/2 tablespoon chopped fresh rosemary

salt and freshly ground black pepper to taste

1/2 cup dry cider

chopped fresh parsley to garnish

Method

Preheat oven to 170C

Lightly grease a large lidded oven proof dish

Layer half of the sliced potato and onion in the dish.

Add some crushed garlic

Heat the oil in a heavy based pan and brown the pork on both sides

Arrange the pork on top of the potato and onion

Add the remaining garlic, rosemary, and season to taste

Spread the rest of the onion on top of the pork and cover with the remaining potato

Pour the cider over the potato, cover the dish tightly and bake in preheated oven for 1 1/2 to 2 hours

Sprinkle with chopped parsley before serving

Serves 4
