Pork Pie
Pork, sausage meat, spinach, spring onions, nectarines or apples, lemon rind, nutmeg and eggs mixed together, covered with pastry and baked in a pie dish
Ingredients
1.5 kg ready-rolled frozen pastry, thawed
600 g pork fillet, diced
450 g sausage meat
450 g frozen spinach, thawed, drained and chopped
4 spring onions, chopped
3 nectarines or peeled apples, diced
1 teaspoon grated lemon rind
1/2 teaspoon grated nutmeg
2 eggs, beaten
Preparation
Preheat oven to 200°C.
Line loose-bottomed 22 cm round cake tin with half the pastry.
Mix the pork, sausage meat, spinach, spring onions, nectarines or apples, lemon rind, nutmeg and eggs together
Pour pork mixture into pastry shell
Cover with pastry, dampen edges and seal on topwith remaining pastry
Bake in preheated oven for 1 1/2 to 1 3/4 hours.
Cool in tin.
