Pork Kebabs with Peanut Sauce

Home made pork kebabs covered in peanut sauce

Ingredients

500 g pork rump steak

1 1/2 teaspoons curry powder

1/2 cup coconut cream

salt, to taste

18 short bamboo skewers

coriander to garnish

Peanut Sauce

2 large cloves garlic

1/2 cup peanut butter

1 tablespoon Tamari

pinch cayenne

250 ml water

Method

Cut the pork into strips about 7.5 cm by 2.5 cm

Combine the curry powder, coconut cream and salt in a bowl

Add the pork

Stir thoroughly, cover and refrigerate for a least 1 hour

Preheat the grill

Thread about 2 pieces of pork onto each skewer

Arrange in a single layer in a shallow baking pan.

Grill under a preheated griller for about 5 minutes, turning once during cooking

Serve with the sauce poured over and garnished with coriander

Sauce

Mix all the ingredients in a pan and simmer gently, stirring until thickened

Serves 4
