Pork Chow Mein

Noodles, pork, mushrooms and spring onions stir fried

Ingredients

125 g Chinese egg noodles

2 tablespoons oil

500 g diced pork

2 cloves garlic, crushed

100 g button mushrooms, chopped

salt and freshly ground black pepper, to taste

1 tablespoon soy sauce

1 tablespoon sherry

3 large spring onions, chopped

Method

Cook the noodles in a saucepan of boiling salted water for 10 minutes or until just tender.

Drain well and set aside

Heat oil in a large frying pan or wok and stir fry pork for 5 minutes.

Add garlic and mushrooms and continue cooking for 2 to 3 minutes, then add the noodles, salt and pepper to taste, soy sauce and sherry

Add the spring onions and cook for further 3 to 5 minutes.

Serve immediately
