Pork Celery and Orange
Stir fried pork with orange
Ingredients
500 g pork schnitzel
2 oranges
1 teaspoon cornflour
1 tablespoon polyunsaturated oil
2 cups celery, thinly sliced
1 red onion, cut in thin lengthwise slices
1/4 teaspoon ground cayenne pepper
Method
Slice pork thinly across the grain
Grate the rind and squeeze the juice from one orange.
Peel the other orange and separate the segments
Blend the orange juice and cornflour and make up to 150 ml with water
Heat the oil in a large non-stick frying pan or wok.
Add pork and stir fry for 3 to 5 minutes until browned. remove and set aside
Stir fry the celery, onion, orange rind and segments for 3 minutes.
Remove and set aside
Pour the orange juice cornflour mixture into the frying pan or wok and cook until thickened, add cayenne pepper
Return the pork and vegetables to the sauce, heat through and serve immediately
