Pork Butterfly Steaks with Passionfruit Sauce
Butterfly pork steaks pan fried in wine with a passionfuit sauce
Ingredients
1 tablespoon oil
4 pork butterfly steaks about 120 g each
1/2 cup dry white wine or water
1 tablespoon apricot jam
1 tablespoon lemon juice
1/4 cup passionfruit pulp
Method
Heat the oil in a heavy-based frying pan, add pork
Cook for about 4 minutes, turn and cook a further 4 to 6 minutes.
Remove and keep warm
In the pan heat the wine and simmer until reduced by half
Stir in the jam, lemon juice and passionfruit pulp, reduce heat and simmer for 3 minutes
Pour over the pork and serve at once
Serves 4
