Pork in Black Bean Sauce

Slices of pork stir fried in a black bean sauce

Ingredients

500g pork schnitzel or leg pork

2 tablespoons oil

2 onions, sliced into wedges

1/2 cup black bean sauce

1/2 cup of water or stock

1/2 teaspoon minced chilli

1 clove garlic, crushed

1 carrot, cut into thin strips, chilled in ice water

1 spring onion, sliced thinly diagonally, chilled in ice water

Method

Slice pork across the grain into thin strips

Heat the oil in a heavy-based frying pan, add the onions and stir fry until just soft, then remove

Add the pork and stir fry until browned

Add the black bean sauce, stock or water, chilli and garlic and stir for a further 1 to 2 minutes

Serve immediately with cooked rice and garnished with the carrot and spring onion
