Plum Marinated Chops
Pork chops oven baked with a plum jam sauce
Ingredients
4 pork shoulder chops
1/4 cup water
2 tablespoons lemon juice
1/4 cup red plum jam
1 tablespoon Worcestershire sauce
1/2 teaspoon five spice powder
pinch salt
1/2 teaspoon lemon pepper
1 tablespoon cornflour
Method
Preheat the oven to 180°C.
Place the water, lemon juice, jam, Worcestershire sauce, five spice powder, salt, lemon pepper and cornflour in a heavy saucepan.
Stir to dissolve and then bring to the boil.
Reduce heat, stirring, and simmer for 2 to 3 minutes.
Place the pork chops in a baking dish.
Pour over the sauce.
Bake in preheated oven for 3/4 to 1 hour.
Baste during cooking.
Serves 4
