Oriental Roast Pork Salad
Pork fillets marinated and served with a salad of greens, pear and raspberries
Ingredients
2 pork fillets
Marinade
1 tablespoon liquid honey
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1/2 teaspoon red food colouring
Salad
185 - 250 g mixed green leaves
1 ripe pear, cored and sliced
1/4 cup raspberries
Dressing
1/4 cup olive oil
2 tablespoons balsamic vinger
salt and pepper to taste
Method
Place the pork in a bowl. Mix the marinade ingredients together and spread over the pork
Place in the refrigerator and marinate overnight, turning occasionally
Preheat oven to 170 C
Remove pork from marinade and place in a roasting dish
Cook for 25 to 30 minutes in preheated oven, basting occasionally with marinade
Remove from oven, stand for 10 to 15 minutes, then slice on the diagonal
To Assemble
Arrange the greens on a platter
Add the pear and raspberries
Arrange the pork on the greens
Sprinkle with the dressing
Serves 4 - 6
