Orange & Apricot Medallion Steaks

Pork steaks cooked with dried apricots and orange juice

Ingredients

4 pork medallion steaks

1 tablespoon olive oil

1 green pepper, deseeded and chopped

1/2 cup orange juice

2 teaspoons cornflour

1/2 cup water

12 dried apricots, chopped

1/2 teaspoon freshly ground pepper

Method

Heat the oil in a large pan, add the pork medallions and brown on both sides

Remove the pork and keep warm

Add the green pepper to the pan and cook for 2 to 3 minutes

Mix the orange juice and cornflour together and add to the pan with the water.

Cook, stirring until the sauce thickens

Add the dried apricots, pork and pepper.

Cover and simmer for 10 to 15 minutes or until the pork is tender

Serves 4
