Old Fashioned Strawberry Pie
A creamy berry topped pie
Ingredients
1 23 cm frozen sweet pastry flan case
1/2 cup white sugar
1/4 cup cornflour
1/2 cup water
4 cups fresh strawberries, hulled and sliced in half
8 teaspoons fresh lemon juice
1 large whole strawberry for decoration
Preparation

Bake pastry flan case according to pack directions
Place flan case on a wire cooling rack to cool.

In a medium saucepan, combine sugar and cornflour
Mix well
Gradually add the water, stirring until mixture is smooth
Add 1 cup of the sliced strawberries
Cook over a medium heat, stirring and mashing the strawberries with the back of a wooden spoon
Bring to the boil and simmer until mixture thickens, about 5 minutes
Remove from heat.

Stir in second cup of sliced strawberries and lemon juice
Cool slightly, then spread in baked flan case
Refrigerate until set, about 1 hour.

Arrange remaining 2 cups of halved strawberries, cut-side down, in concentric circles over filling
Finish with whole strawberry placed in centre.
Variation
When fresh strawberries are out of season, substitute 4 cups of thawed, frozen strawberries.

Frozen sweet pastry flan cases are available in 23-cm foil cases in the freezer section of the supermarket.
Frozen ready rolled sheets of short crust pastry are found in the freezer section of the supermarket, and may need additional rolling and shaping.
Stand 5 minutes before rolling. Ready-made flan cases are available in the baked goods section of the supermarket.
Pastry mix makes a convenient pastry that only requires the addition of water. It must be rolled out on a lightly floured surface.
