Muffins with wholemeal flour or Spiced or Apricot


50 g butter, softened

1/2 cup brown sugar

1 egg

3/4 cup wholemeal flour

3/4 cup Edmonds plain baking flour

1 teaspoon Edmonds baking powder

1/8 teaspoon salt

1/2 teaspoon Edmonds baking soda

3/4 cup milk


Cream butter and sugar in a bowl.

Beat in egg.

Sift wholemeal flour, flour, baking powder and salt together.

Return husks from sifter to bowl.

Dissolve soda in the milk.

Add sifted ingredients alternately with soda to the creamed mixture, mixing just to combine.

Spoon mixture into greased patty tins.

Bake at 200C for 12-15 minutes.

Apricot Muffins

Add 1/2 cup chopped apricots to sifted ingredients

Spiced Muffins

Add 1/2 teaspoon cinnamon and 1/2 teaspoon mixed spice to sifted ingredients.
