Moist Banana Cake
Freeze your over ripe bananas and then defrost them to make this moist banana cake.
Ingredients
125g butter
100g white sugar
75g brown sugar
2 large eggs
2 mashed bananas
1 teaspoon baking soda
2 tablespoon boiling milk (heat in a cup in microwave for 10 second bursts)
1 teaspoon baking powder
1 teaspoon allspice or mixed spice
1 teaspoon vanilla essence
225g flour
Method
Cream butter and sugars in food processor / blender
Combine baking soda and milk, and mix to froth them
Add this to blender, along with eggs and defrosted bananas
Blend
Mix flour and baking powder, and add to blender
Blend until combined, but do not over-mix
Bake in a greased ring tin at 180 degrees C or 350 degrees F for 35-40 minutes
Serve warm with custard, or cool & ice with vanilla or cream cheese icing
