Roast Pork Marinated

A Marinade for a Pork Roast

Ingredients

1 kg boneless pork roast, eg rolled loin, scotch fillet

1/4 cup soy sauce

3 tablespoons dry sherry

2 teaspoons Worcestershire sauce

3 tablespoons lemon juice

1 tablespoon brown sugar

3 cloves garlic, crushed

1 & 1/2 tablespoons grated fresh ginger

1 tablespoon chopped fresh coriander

Method

Place pork in close-fitting oven proof dish

Combine remaining ingredients thoroughly, pour over the pork

Cover and marinate overnight in a refrigerator

Preheat oven to 170 C

Remove the pork from the marinate.

Save the marinate

Place the pork on a rack in a roasting dish and roast for 1 to 1 & 1/4 hours, basting several times with the reserved marinade

Serves 8 - 10
