Italian Meatballs

Meatballs made with Pork mince topped with a tomato based sauce

Ingredients

500 g pork mince

2 spring onions, finely chopped

1/2 cup dried breadcrumbs

2 tablespoons milk

1/2 teaspoon dried oregano

1/2 teaspoon freshly ground black pepper

salt to taste

flour, to coat

2 tablespoons oil

Sauce

1 teaspoon oil

1 medium onion, sliced

1 red pepper sliced

2 x 400 g cans tomatoes, whole peeled

2 tablespoons chopped fresh basil or parsley

Method

Meatballs

Combine mince, spring onions, breadcrumbs, milk, oregano, pepper and salt together in a bowl and mix thoroughly

Shape the mixture into 40 meatballs.

Roll each meatball in flour

Heat the oil in a pan, add the meatballs and cook for 4 to 8 minutes turning frequently

Sauce

Heat the oil in a large frying pan.

Add onion and cook for two minutes

Stir in red pepper and cook 2 to 3 minutes more

Stir in the canned tomatoes, juice and basil or parsley

Simmer sauce for 5 minutes or until thickened

Serve over the meatballs
