Italian Casserole

Ham, Macaroni, Tomatoes, Peppers, Olives and Mozzarella Cheese Oven Baked

Ingredients

100 g macaroni, uncooked

1 tablespoon olive oil

1 clove garlic, crushed

1 onion, peeled and chopped

2 x 400 g cans tomatoes in juice, rained and chopped

1 tablespoon tomato paste

1 red pepper, deseeded and chopped

1 green pepper, deseeded and chopped

300 g lean ham diced

10 black olives, stoned and halved

freshly ground black pepper to taste

150 g mozzarella cheese grated

Preparation

Cook the macaroni in boiling water for 10 minutes or until tender but still firm

Rinse and drain well

Preheat oven to 180

Heat olive oil in a pan and fry onion and garlic until onion is soft

Add tomatoes, tomato paste, red and green peppers, ham, olives and black pepper and simmer for 5 minutes

Stir in cooked macaroni and pour into shallow baking dish

Cover with the cheese and bake in preheated oven for 20 minutes or until cheese is golden brown

Serve immediately
