Ham and Mushroom Sauce Carbonara
2 tablespoons oil
2 ham steaks, chopped
1 onion, chopped
200 g mushrooms, sliced
250 g pot sour cream
1 egg yolk pepper
300 g Diamond pasta, cooked - e.g. sea shells, kluski, egg noodles
1 tablespoon chopped parsley
Preparation
Heat oil in a frying pan or saucepan.
Add ham and onion.
Cook until onion is clear and ham slightly browned.
Stir in mushrooms and cook for a further 2 minutes.
Remove from heat.
In a bowl beat sour cream and egg yolk together.
Add this to ham mixture.
Return pan to a low heat and cook, stirring constantly until sauce thickens slightly.
Do not allow to boil.
Season with pepper to taste.
Add hot pasta.
Stir to combine.
Garnish with parsley.
Serves 4 - 6
