Ham & Carrot Loaf

Ingredients

200 g ham steak, diced

3 tablespoons butter or oil

500 g carrots, peeled and diced

2 teaspoons brown sugar

salt and pepper, to taste

250 ml vegetable stock

200 g mushrooms, sliced

1 small onion, finely chopped

1 tablespoon chopped fresh parsley

25 g cheese, grated

4 eggs beaten

Preparation

Place the ham in a bowl

Heat half the butter in a pan, add the carrots and cook until lightly browned

Add the sugar, salt and pepper and the stock

Simmer until the liquid has evaporated then transfer to the bowl with the ham

Preheat the oven to 200 C

Heat the remaining butter, add mushrooms and onion and cook until softened

Add this to the ham and carrot mixture, then add parsley, cheese and eggs.

Mix well

Spoon into greased 21 cm x 11 cm loaf tin

Place loaf tin in a larger dish with enough warm water to come halfway up the sides

Bake in preheated oven for approximately 45 minutes or firm to the touch

Serves 6 - 10
