Ham Blinis
Spoonfuls of ham, egg mixture dropped into pan and cooked until bubbles appear
Ingredients
200 g ham
125 g flour
1 teaspoon baking powder
1 egg, beaten
125 ml milk
125 ml water
1/2 teaspoon French mustard
1/4 teaspoon cayenne pepper
To Garnish
Sour cream
2 - 3 cherry tomatoes
10 parsley sprigs
Preparation
Mince the ham finely
Sift the flour and baking powder into a bowl
Blend the egg, milk and water together and mix in
Add the ham, mustard and cayenne pepper and mix well
Heat a heavy based pan and brush lightly with oil
Drop spoonfuls of the mixture in the pan and cook until bubbles appear on the surface, turn and cook the other side
Place a dab of sour cream on each blini, top with a slice of tomato and a parsley sprig
