Goulash

Goulash, pork and potatoes casserole

Ingredients

2 tablespoons butter

500 g diced pork

1 large onion, diced

1 tablespoon paprika

1 clove garlic, crushed

1 teaspoon caraway seeds

2 tablespoons tomato paste

1 1/4 cups water or stock

600 g potatoes, peeled and sliced

salt and pepper, to taste

1/4 cup sour cream

1 tablespoon chopped fresh parsley

Method

Heat the butter in a heavy-based pan and brown the pork.

Place in a casserole

Add the onion to the pan and cook until lightly browned

Sir in the paprika and garlic and cook stirring for 2 to 3 minutes

Add the caraway seeds, the tomato paste and the water or stock

Bring to the boil and pour over the pork.

Cover, Simmer over a low heat, for 30 minutes

Stir in the potato, cover and cook for a further 30 minutes or until the pork and potatoes are tender

Season to taste and stir in the sour cream

Serve garnished with the parsley

Serves 4
