Glazed Pork & Ham Loaf

Pork Mince, ham and apricots make a flavoursome loaf. Easy to make

Ingredients

400 g lean ham

50 g dried apricots

500 g pork mince

1/4 cup chopped fresh parsley

100 g dry breadcrumbs

50 ml milk

Glaze

100 g brown sugar

50 ml cider vinegar

2 tablespoons Dijon mustard

50 ml water

Preparation

Preheat the oven to 180 C

Process or mince ham and apricots until finely chopped

Add pork mince, parsley, breadcrumbs, and milk and mix thoroughly

Press into lightly greased 21 cm x 11 cm loaf tin

Bake in preheated oven for 1 hour, brushing with glaze every 15 minutes

Turn loaf onto baking tray, brush glaze over sides and bottom and cook a further 15 minutes

Cool for 15 minutes before slicing

Glaze

Combine sugar, vinegar, mustard and water

Bring to the boil and simmer for 15 minutes

Use as directed above
