Glazed Baked Onions
Serves 6 as an accompaniment
Ingredients
8 medium sized onions (or 16 pickling onions)
1 tablespoon butter, or margarine
¼ cup tomato juice (fresh or tinned)
2 tablespoons honey
1 teaspoon salt
pinch cayenne pepper
2 bacon rashers, chopped
chipped potatoes to serve
parsley to garnish
Method
Peel onions, cut into halves if using the bigger onions or leave the smaller ones whole.
Place into greased ovenproof dish.
Combine melted butter with tomato juice, honey, salt and cayenne, and pour over onions.
Cover and bake in a moderate oven 1 hour or until onions are tender.
Sprinkle with chopped bacon, return to oven and cook uncovered until bacon is crisp.
Serve hot with chipped potatoes and garnish with parsley.
