Georgia Chicken

Chicken in a lemon juice, honey, soy sauce, marinade topped with peaches and garlic

Ingredients

4 skinless single chicken breast fillets (125 g each)

For the Marinade

1/4 cup fresh lemon juice

8 teaspoons honey

4 teaspoons soy sauce

1 clove garlic, crushed

For the Sauce

1 825 g can peach slices in natural juice

4 teaspoons brown sugar

1 teaspoon ground ginger

4 teaspoons fresh lemon juice

Method

To prepare marinade, combine lemon juice, honey, soy sauce and garlic in a shallow glass dish

Mix well

Add chicken, turning to coat

Cover

Refrigerate for 30 minutes

To prepare sauce, drain peaches; reserve 1/2 cup of juice.

In a blender or food processor fitted with a metal blade, mix half the peaches, 1/2 cup juice, brown sugar and ginger until smooth.

In a saucepan, simmer peach mixture over low heat for 5 minutes.

Stir in lemon juice.

Remove from heat.

Keep warm.

Preheat grill.

Line grill pan with foil.

Place chicken on rack in grill pan.

Grill 10 cm from heat, turning once, until cooked through and no longer pink, about 12 to 14 minutes.

Cut chicken into thin slices.

Spoon sauce on each plate.

Arrange chicken and remaining peach slices on top.

Cooks Tips

To fan chicken breasts, cut across breasts with a sharp knife, gently separating the slices a little. Arrange the slices and peaches over the sauce.

Use a wooden honey server to control the drizzle of the honey. The grooves in the server hold the honey in place and prevent excessive dripping.
