Fruit Loaf
Nice and easy Edmonds Fruit Loaf
Ingredients
1 cup fruit - e.q. raisins, dates, sultanas
1 egg, beaten
1 cup milk
2 cups Edmonds plain baking flour
1/4 teaspoon salt
2 teaspoons Edmonds baking powder
50 g butter
1/2 cup sugar
Method
Sift flour, salt and baking powder into a bowl
Cut in butter until it resembles coarse breadcrumbs
Add sugar and fruit
Make into a soft dough with egg and milk
Pour into a greased 22 cm loaf tin
Bake at 180°C for 1 hour or until loaf springs back when lightly touched
Leave in tin for 10 minutes before turning out onto a cooling rack.
