Fruit Crumble
Add variation to the Crumble, use wholemeal flour or oats. Make a Fruit Betty with breadcrumbs
Ingredients
2 cups stewed fruit - e.g. apples, plums, apricots
2 tablespoons brown sugar
1 cup Edmonds plain baking flour
1 teaspoon Edmonds baking powder
50 g butter
1/4 cup sugar
Preparation
Place stewed fruit in bottom of an oven proof dish
Sprinkle with brown sugar
Sift flour and baking powder into a bowl
Cut in butter until it resembles coarse breadcrumbs
Stir in sugar
Spoon mixture over fruit
Bake at 190°C for 30 minutes or until pale golden
WHOLEMEAL CRUMBLE
Replace flour with wholemeal flour. Increase butter to 75 g
WHOLEMEAL OAT CRUMBLE
Reduce flour to 1/2 cup. Increase butter to 75 g. Stir in 1/2 cup Fleming's wholegrain oats after sugar
FRUIT BETTY
Omit flour and baking powder and replace with 2 cups soft breadcrumbs
Increase butter to 100 g and melt
Combine butter and breadcrumbs, cooking until pale golden and slightly crisp
Add remaining crumble ingredients
Layer apple mixture with breadcrumb mixture, finishing with a layer of breadcrumbs
Cook as above until golden.
Serves 6
