Fresh Lemon Loaf
Lemon and Walnut loaf
Ingredients
125 g butter
3/4 cup sugar
1 teaspoon grated lemon rind
2 eggs
2 cups Edmonds self raising flour
1/4 teaspoon salt
1/2 cup milk
1/4 cup chopped walnuts
Glaze
1/4 cup lemon juice
1/4 cup sugar
Method
Cream butter, sugar and lemon rind in a bowl until light and fluffy
Add eggs and beat well
Sift in flour and salt alternately with milk
Mix in nuts
Turn into a greased and lined 23cm loaf tin
Bake at 180°C for 45-50 minutes or until loaf springs back when lightly touched
Pour glaze over loaf
Leave in tin until cold
Glaze
Stir lemon juice and sugar in a saucepan over a low heat until sugar dissolves
Bring to the boil
Remove from heat and leave to cool.
