Fish Batter

Choose low-fat ingredients when cooking fish as most fish have the advantage of being low in fat.

BEER BATTER

1/2 cup Edmonds plain baking flour

1/2 teaspoon salt

1/4 cup beer, approximately

Preparation

Sift flour and salt into bowl

Add measure of beer without a head

Mix to a smooth batter

Makes about 1 cup.


CRISP BATTER

1/4 cup Edmonds Fielder's cornflour

1/2 cup Edmonds plain baking flour

1 teaspoon Edmonds baking powder

1/4 teaspoon salt

1/2 cup milk

oil for deep-frying

Preparation

Sift cornflour, flour, baking powder and salt into bowl

Gradually add milk, mixing until smooth

Dip the items to be cooked in the batter, ensuring they are well coated

Deep-fry in hot oil until golden

Drain on absorbent paper before serving

Makes about 1 cup


CRISPY CHINESE BATTER

Edmonds Fielder's cornflour

1 egg white

Preparation

Coat the items to be cooked with cornflour

Lightly beat the egg white with a fork

Dip the coated items in egg white then deep-fry

Drain on absorbent paper
