Dates and Lemon go into this easy to make Date Cake

Ingredients

125 g butter, softened

1/2 cup sugar

1 tablespoon lemon juice

1/4 teaspoon grated lemon rind

2 eggs

1 1/2 cups Edmonds plain baking flour

1 teaspoon Edmonds baking powder

2 tablespoons milk

3/4 cup chopped dates

Method

Cream butter, sugar, lemon juice and rind until light and fluffy

In a separate bowl beat eggs until thick

Sift flour and baking powder together

Add flour to creamed mixture alternately with the eggs

Stir in milk

Add dates and fold into cake mixture

Pour into a greased 18 cm ring tin

Bake at 180°C for 30-40 minutes or until an inserted skewer comes out clean

Leave in tin for 10 minutes before turning out onto a cooling rack.
