Curried Vegetables Pan or Microwave

Dinner time vegetables with spice

Ingredients

50 g butter

1 onion, sliced

2 potatoes, diced

2 teaspoons hot Indian curry powder

1 tablespoon lemon juice

1 tablespoon Edmonds plain baking flour

salt black pepper

1 cup water

3-4 cups of chopped or sliced vegetables - e.g. carrots, beans, green pepper, courgettes, mushrooms, celery, broccoli, cauliflower

Method

Melt butter in a large saucepan

Cook onion and potato gently for 5 minutes, stirring frequently

Add curry powder, lemon juice, flour, salt and pepper to taste, and cook for 1 minute

Add water and remaining vegetables

Cover and simmer gently for 5-8 minutes or until vegetables are tender.

Microwave

Reduce water to 1/2 cup

Put butter in a large dish and cook on High Power (100%) for 30 seconds

Add onion and potato and cook for 1 minute

Add curry powder, lemon juice, flour, salt and pepper to taste, and cook for 1 minute

Add water and remaining vegetables

Cover and cook for 6 minutes, stirring after 3 minutes.

Serves 4
